MAME and Analog Controls

I've looked around but not really found an answer to this so I'll ask; how does one reverse pedal analog control per game? I've got things set up for most games but some need reversing and surely they dont need to be changed in the menu per game?

While I'm at it, how would one select different music and difficulty on ridge racer and just for kicks, is better support for rave racer planned for the somewhat near future?

These games are really close to working properly, it's almost Easter so maybe a couple of eggs would be in order..
